The whole idea behind sous vide is slowly attain the perfect degree of doneness and not one degree higher By Douglas I usually don't buy things that have such few reviews. Because of the price and return policies, I took a chance.I don't think the cooking temperatures in the recipes are really sous vide cooking. The whole idea behind sous vide is slowly attain the perfect degree of doneness and not one degree higher. Perfect beef, in my opinion is medium rare ast 129 degrees. Cooking any beef to 180 degrees shows a lack of respect to the steer who gave his all. The strange thing about the recipes is that the author got chicken right at 140 degrees. That doesn't sound safe but it is because of the time that it is held at 140 degrees. I returned it because of the inconsistencies of temperatures.

I understand from reading Josie Mackville, the author's book that it means Under Vacuum. The way the author explains it you use vacuum sealed bags submerged in water at a particular temperature which make the final product juicier and delicious, unlike say frying, steaming, baking and grilling which tend to be drier. I looked up Sous Vide, which is a type of French cooking and it seemed to be very precise, not something a untested chef would attempt, but the author obviously believes with her method, it's easy. I have yet to try this, having just read the book, but there are a few recipes included that I am willing to try such as one of my favorites, Tomato Soup and also German Potato Salad.

In chapter three the roast lemon chicken is out of this world. My mom loves the mater soup in chapter one and the garden salad in chapter two
