Needs more photos By Ashley Well first I will start off by saying I am not a Vegan because I do enjoy meat but this was a good read because some days I like to switch things up.I enjoyed the one pot meals. I like the convenience of throwing all the food into a pot or a crockpot and just letting it all cook. Today we are all so busy with work , kids , school. It can be a hassle to try and cook on a daily basis for families or even just for ourselves.I live alone and it is extremely hard to cook for just myself. So much food goes to waste so I usually just make a sandwich.This book helped me with that. I can make small things without meat for just myself.I read this book on my kindle so I am not sure if the paperback is the same but their aren't many photos of the recipes. Thats the only reason I gave the 4 star rating. I like to see a photo of what I am making. Other than that small hiccup this book was a wonderful read.

We are not vegetarians, nor are we vegan, however, this book is great for the nights we want something a little lighter.The recipes all make for 2, which is nice--rather than creating and hoping someone wants leftovers. In addition to this there are tips with many of the recipes on what to do when a recipe doesn't call for the whole can of something--how to maximize usage and minimize waster--and let's face it with today's food prices, maximizing usage is a plus!There are also substitution suggestions.Recipes are clearly labeled if they are soy free nut free or dairy free.This book has some great information on saving money. I really loved the section on 10 ingredients to keep in your pantry. The recipes are well balanced including recipes for all three meals and also dessert! There are recipes that require time, and many that are 30 minutes or less.The one thing I did not like about this book is that the beginning is a turn off--the author's wording is almost a lecture to those who opt to eat meat. Eat and let eat!Aside from the beginning, I really found this cookbook to be helpful and useful.

By D.Cruz Although the book an interesting book, I gave the book only 4 stars due to obvious biased opinions in the beginning. I am not vegan, but I am about 20 pounds heavier than I would like to be. I used this book to guide healthier eating options to slim down. I found the recipes easy to follow, and I personally love that the recipes are enough for more than a single serving. A couple could easily share almost every recipe. I thought doing a vegan diet for 2 months might have been difficult, but this book has definitely helped with the transition! I recommend this for anyone wishing to clean up their diet. :)
